How to cook your own delicious stinging nettle soup

The last couple of weeks you have read about the history of bonfire food in the northern Europe, and you have read about what to look out for, as well as what benefits can be associated with cooking over a bonfire.

I really hope you have enjoyed following along with this post and hopefully you have had the courage, or incentive, to try cooking outdoors out for yourself. If you have not yet, there is still time. This week is all about cooking, maybe your first but definitely not your last, meal outside by an open fire.

So without further ado let us begin:

Stinging nettle soup

Stinging nettle is a widely spread plant, usually considered a weed because it grows fast and aggressively in our gardens. It is easy to come by, grows almost all year round and it just so happens to taste deliciously in a soup.    

What you will need:

  • Fireplace

  • A grill, pan or a large rock preferably granite (and definitely not flint!)

  • A pot

  • Bowl

  • Soup spoon

How to:

Start by making the bread dough, because it needs to sit for some time

1.   Pour the water into the bowl and add yeast. Stir until dissolved

2.   Add salt and oil

3.   Add flour a cup at a time while stirring with a spoon or your hands

4.   When the dough is kneaded, place it somewhere in the bowl with a towel over it for around 30 minutes

Now for the soup:

1.   Put the pot on the grill until it is warm (3-5min)

2.   While the pot is heating up, chop the onions and garlic

3.   Cut the bacon and potatoes in cubes

4.   Remove the pot from the heat and add butter, let it melt without caramelizing it

5.   Fry the onions, garlic and bacon for 5min on low heat or to they are ready, do not let them char/burn

6.   Add potatoes, bouillon, salt and pepper and put the pot back over the heat. Cook with lid for 10min or till the potatoes are soft.

7.   While the potatoes are cooking, rinse and cut the stinging nettle leaves nice and fine. You can use gloves so they do not sting you.

8.   Add the leaves to the soup together with cream/plant milk and cook for 2-3min. add salt and pepper if you want.

While the soup is getting done, it is time to make the bread:

1.   Put a little flour in your hands to prevent the dough from sticking, sprinkle some flour on the dough and knead just a 1min.

2.   Make 6 evenly sized buns of dough

3.   Pour a pinch of oil on the pan or rock that you are using to prevent the dough from sticking. If you are using a grill this is not a problem

4.   Place the pan on the grill over the fire. If you are using a rock then place it in the middle of the fire

5.   After a few minutes the pan/rock is heated and you are ready to bake your bread. Put the buns on one at a time, turn them over after 1-2min and bake on the other side for 1-2minutes as well.

6.   If you have room on the grill, you can bake more than one at a time, but be careful they bake very quickly

Now enjoy your warm bread with the soup. Possibly with a glass of mead or homemade lemonade
